what can be better than potatoes?

You can bake, fry, mash, boil, and even eat it raw, although it isn't highly recommended(or even not at all recommended.) Who doesn't love potatoes?

Potato, nutritionally rich tuberous root vegetable, is a good source of starch and fiber. It is one of the most widely grown perennial crops and is one of the low cost staple food items of the poor population all over the world. Botanically, it belongs to the various perennial subspecies of Solanum tuberosum of the Solanaceaefamily.
The plant grows about 12 to 18 inches in length and bears many tubers underground. The tubers usually have round to oval or oblong shape and vary widely in size. Internally, the flesh features bright cream-white, rose red or russet color depending on the variety with moist texture and have special buttery "potato" flavor.

Benefits of a potato

Potatoes are one of the richest sources of starch, vitamins, mineral, and dietary fibers, good news; THEY CONTAIN VERY LOW FAT AND NO CHOLESTEROL. This is why potatoes are very good for diets.
The fiber helps in slowing the absorption of starch in the gut and keeping the sugar blood flow in normal speed. It is also one of the richest source of B-complex vitamins! 
Potato skins, as long as fresh, are a good source of antioxidant vitamin or vitamin C.
They also contain adequate amount of many minerals like iron, manganese, copper, and potassium.
Recent researchers also stated that potatoes may even prevent cancer and such serious diseases!
